Spices are the highest-impact, lowest-cost thing in any kitchen — the difference between bland and delicious for pennies a meal. The trick is buying them cheaply and using them before they fade.

Buy from the bulk aisle

Little glass jars from the spice aisle are wildly overpriced. Buy from bulk bins or international grocers instead, where the same spices cost a fraction, and decant them into small matching jarsaffiliate so the drawer stays tidy and you can see what you have.

Start with a versatile core

Cumin, smoked paprika, cinnamon, chili flakes, coriander, and a good peppercorn will carry most of what you cook. Add others as recipes call for them, rather than buying a rack of fifty you’ll never finish.

Keep them fresh

Buy whole where you can, grind as needed, and store away from heat and light. Fresh, well-stored spice does more for a dish than any expensive gadget.
